Making peanut butter cookies
These gluten-free, dairy-free cookies are so easy to make.
Start by preheating your oven to 350°F and line two baking sheets with parchment paper.
Add all ingredients and mix in a bowl until well blended. The end result should be a soft, cohesive dough.
Use an ice cream scoop or tablespoon to scoop the dough onto the parchment-lined baking sheet. Use a glass cup to flatten the peanut butter cookie dough, being careful not to make it too thin.
Press into the flattened dough with the back of a fork to create a nice crisscross pattern. This step is optional, but will give the peanut butter cookies a nice look.
Place the cookies in the oven to bake for 10 minutes, or until the edges begin to brown. It may take less than 10 minutes to bake depending on your oven, so check your cookies after 8 minutes.
The peanut butter cookies will harden as they cool outside the oven. Use the edges of the cookies as a sign of doneness.
Remove them from the oven and let them cool completely. Once they are at room temperature, eat as many as you want!
