How do you make this Greek-inspired chicken?
Preheat your oven to 425°F and line a baking sheet with parchment paper.
To get the juiciest and most flavorful chicken, start by marinating the chicken. Combine oil, lemon juice, garlic, Greek herbs, salt and pepper in a small bowl. Place the chicken in a large bowl, pour ⅔ of the mixture over the chicken and set aside.
While the chicken is marinating, prepare the vegetables. Roughly chop the zucchini, peppers, tomatoes and other vegetables you like. Feel free to use other vegetables, but use vegetables that are low in moisture.
Place the vegetables on a baking tray lined with baking paper and cover with the rest of the marinade mixture. Make some openings in the vegetables for the chicken. Place the chicken on the baking tray and bake in the oven for 30 minutes.
Remove from the oven and sprinkle the feta cheese on top. Return to the oven for another 10 minutes, or until the chicken is cooked through. The internal temperature should be at least 165°F.
Take it out of the oven and serve it with some rice or a salad.

Place the chicken in another bowl and pour over of the marinade. Let rest while you make the rest of the ingredients. Roughly chop all the vegetables and place them on the baking tray lined with baking paper. Pour over the rest of the marinade and toss briefly. Make sure they are evenly covered with the marinade. Make room for the chicken breasts on the baking sheet. Add the chicken to the baking sheet. Bake for 30 minutes. Remove the chicken from the oven and add some feta. Bake for another 10 minutes, or until the chicken has reached an internal temperature of 165°F. Serve with some rice or salad, or eat as is. Enjoying!
