If you loved the old-fashioned lemon cooler cookies of the past, you must try this no-sugar-added version! They are perfectly lemon and chewy and crunchy at the same time. They take about 15-20 minutes to make, including baking time! What could be better?!?
Carbohydrates 4 net grams
Protein 4.6 grams
Preheat the oven to 350F.
Cover the baking tray with baking paper.
2 cups almond flour
1 cup of 0-calorie granulated sweetener of your choice
1/4 teaspoon salt
4 packs of True Lemon Crystalized Lemon
2 egg whites beaten to stiff peaks, MUST BE AT ROOM TEMPERATURE!
1/4 cup Swerve Confectioner’s
2 packs of True Lemon
Mix dry ingredients.
Mix the beaten egg whites until fully incorporated.
Spoon in heaping tablespoons to make 12 cookies.
Roll into a ball.
Dredge in topping.
Place on a baking tray and mash gently.
Bake at 350F until bottom is lightly browned.
You can also sprinkle with extra topping!
